Spicy Pineapple Margarita

Must use good quality tequila for this drink.


Ingredients


Tequila (quality  & type of tequila matters) I used 1800 agave coconut tequila
pineapple juice
lime
cayenne pepper


Directions:
Take 2 shots of tequila, 2 shots of pine apple juice and 1 shot of lime juice in cocktail shaker. pour over a glass filled with ice. sprinkle some cayenne pepper or any red pepper on top. let it sit for 5 mins to taste better.


Another method

Cut jalapeno pepper and throw the seeds away. Put two pieces of jalapeno in tequila and let it sit for a minute or two. one can muddle the jalapeno a little.

Then add 2 shots of pineapple juice, 1shot of lime juice and add ice to the glass. For added taste, put salt on the glass rim and also some cayenne pepper. Add a dash of orange liquor ( I added Grand Marnier), its optional.




Pina Colada

This is my most favorite drink

Take a pineapple. Hollow it out.







Take half the pineapple in a grinder. Add few strawberries for nice color. Add half can of coconut milk (7 oz). Add brown sugar if unsweetened coconut milk used. Blend everything together. Add some ice and crush it with the mixture.
Then add few shots of rum. I use mix of white rum, coconut rum and dark rum. If one of the rums is missing, its no big deal.  Add rum as per flavor.




Serve it in the hollow pineapple.

Virgin cocktail also tastes yummy.


Choice of coconut milk is important.
I recommend using plain coconut cream from Trader Joes. It doesn't have sugar, so sugar can be added as per your taste.




Other option is to use Coco Lopez coconut milk. It will add thickness to the drink, but may make the drink too sweet.



Mojito

Mango Mojito or Rasberry Mojito

Take 12-14 washed mint leaves, squeeze some lime juice and put piece of lime,  add 1 spoon brown sugar (more for desired taste) and muddle all the ingredients well.



For flavored mojito, one can add mango pieces or watermelon or rasberry pieces and muddle them in.

Then fill the glass with ice cubes. Add 2 shots of rum and top the glass with club soda.

Invert the glass upside down and serve the delicious mojito.











Banana Liqueur

Make your own banana liqueur

Take 2 slightly ripen bananas. cut them in pieces.
Take 1 1/2 cup white rum in a tight container. Add bananas into the rum and let the container sit for 4-5 days. Keep the container away from light in  a cool place.

After 4-5 days, filter the bananas out. I use cheese cloth to filter. Filter 2-3 times.
Then take 1/2 cup water and mix 1/2 cup sugar in it. Add this sugar syrup in banana rum. Add 1-2 drops of vanilla essence or a vanilla pod.

Banana liqueur is ready, Store it in refrigerator. Stays good for 1 month, but wont last that long.

Strawberry martini


To get the best strawberry martini flavor, infuse your own vodka with strawberry.

Take ripe strawberries in a jar and fill it up with vodka. shake the jar and let it sit for 3-4 days. It might be ready earlier. I look at the color of strawberries everyday. when strawberry color is completely faded, turned white, its time to filter out the strawberries.


















Use this infused vodka to make martini.


Take crushed ice in a martini glass. Combine strawberry vodka, sugar syrup in a cocktail shaker. Depending upon the strength of strawberry vodka, one may add plain vodka. also a splash of vermouth can be added.

Pour the martini in a martini glass. let the drink sit for few mins until some ice melts.
